Spaghetti has always been a favorite meal in my family. It is easy to cook, and you can't go wrong with the sauce. I have never had spaghetti without some kind of meat be it, hot dogs, hamburger, or even sausage. So when I made this one night, it was the first time cooking and eating a vegetarian sauce. I was surprised, but it was delicious without the meat and with just zucchini, celery, onions, and corn. This is something that I will make again but maybe with different vegetables. The great thing with spaghetti is that there is no right or wrong way to make the sauce. You can make it just the way you like. I made it because I wanted spaghetti, but we didn't have any hamburger. There were vegetables that I needed to eat up, and so this is what I made instead. This is another one of my experiments that came out great.
Ingredients
1 Zucchini, Cut up
3 stalks Celery, Cut up
1 box Pasta
2 Onions, Peeled and chopped
1 can Corn
1 can Meatless Spaghetti sauce
Instructions
In a saucepan, boil water then add the spaghetti. Cook the spaghetti until it is done. After it is done, take off the stove and drain. Set aside.
For supper, I decided that I wanted to cook the chicken that I bought. I decided to pair it with rice since both my husband and I love rice. He likes his with sugar, and I eat mine with soy sauce. Then I had to decide how to cook the chicken. I knew the deep fryer was not a choice since I have no experience using the one we have. So it was either the skillet or toaster oven. This recipe chooses me. I had all the ingredients, and the picture looked amazing. Of course, when I made this recipe, it didn't look like the picture, but it was still delicious and worth the time and effort it took to make. I hope you like this recipe as much as I did.
What I love about chicken is that there are many ways to cook it. For example, this recipe calls for flour, paprika, salt, and pepper. Most people have these in their pantry. You can add ingredients to this recipe. If you don't like paprika, you can take it out and replace it with another spice. There are no bad ways to cook chicken. This recipe is prepped and cooked in an hour, which is great if you're busy.
Since this recipe uses chicken legs, you need to make sure they are cooked at 180 degrees. I had never made this recipe before, but my husband and I loved it. It was mouthwatering and crispy.
Cook Time
Prep time: 10 min
Cook time: 50 min
Ready in: 1 hour
Yields: 7
Ingredients
7 Chicken Legs
1 TBSP Paprika
1/2 cup Flour
1 1/2 tsp Salt
1/2 tsp Pepper
Vegetable oil
Instructions
In a bowl, mix and stir the following ingredients, flour, salt, pepper, and the paprika. Make sure it is mixed well.
In a skillet, pour the vegetable oil and turn on. Pour enough oil so it covers the bottom of the skillet.
Take the chicken legs and place it in the flour mixture. Coat the chicken with the mixture to make sure it is covered. Place the chicken in the skillet on high and let cook for 10 minutes or until brown then flip it over and cook for another 10 minutes. Then for about 20 minutes cook uncovered and turn the temperature down a little. Each skillet is different so make sure the chicken is thoroughly cooked before eating.
I love zucchini so when I had the chance I picked some up for the idea of making zucchini bread. If you are like me, there are times that you have to be in the mood to bake. Yesterday, I was in the baking mood and decided to make the bread before the zucchini went rotten. I don't have a bread or loaf pan so I decided to make it in the cake pan. Then I realized that I didn't have my mother's zucchini bread recipe so had to look online for a simple recipe. I found one and decided to try it. It was while I mixing the ingredients that I realized that I didn't have enough flour but thought oh well, it's too late now. So I proceeded to make the recipe with what I had. So the recipe below is not exactly what the original recipe said to use. I have to admit that it still came out delicious even without the three cups of flour. I used two cups of flour instead. I hope you like this recipe.

I ran out of coffee yesterday but didn't have a chance to pick some up today. I had been drinking several cups of hot tea but wanted something different. I was searching through recipes and came across this recipe and decided to try it. The great thing about this recipe is that you can either add ingredients or take out some that you don't like. You can even put in more or less of the ingredient. For this recipe, I used 1/2 tablespoon of cinnamon, vanilla, and sugar because I love the taste of cinnamon and vanilla. Even my husband liked this drink.
Ingredients
1 cup milk
1/2 TBSP vanilla extract
1/2 TBSP sugar
1/2 TBSP cinnamon
Instructions
In a saucepan, heat milk, sugar, vanilla extract, and cinnamon until it is blended. When it is as hot as you like, turn off the stove and pour into your cup. Drink and enjoy.
Tonight was the first time in years that I made these tuna cakes. They were as easy and delicious as I remembered. My husband has never tried them but he loved them. I think you would be amazed at how good they taste.
These tuna cakes are easy to make. All you need to do is stir the ingredients together. There is no tuna fish that is different than the others. In order to make the tuna cakes, you just take some of the mixtures, roll it in a ball then press down until you make a patty.
Ingredients
2 cans tuna, drained
1 egg
1 TBSP onion, minced
dash paprika
1/8 tsp oregano
1 slice bread, small pieces
Instructions
In a bowl, combine the drained tuna fish, egg, onion, paprika, oregano, and the small pieces of bread. Mix together well. Make it into patties and fry them in a skillet. Fry them like you would a hamburger.
I wanted to make apple crisp today so I went and peeled, cored and sliced the apples and placed them in the baking dish. I didn't have the recipe that I used so I went online to find one but in the end, I had to use the ingredients from two recipes to make this apple crisp. I think it turned out great. My husband liked it, also. One recipe had brown sugar which I didn't have so I substituted white sugar instead. Since this recipe used butter, I went online to find a recipe with no butter. So I used canola oil instead. so, in the end, I took the ingredients and the amount and came up with my own recipe. I hope you like it as much as I do.
The great thing about apple crisp is that you can take out ingredients or add some and come up with your own recipe. It is also healthy for you.
Ingredients
6-9 Apples, Sliced
1/3 cup Canola Oil
1 tsp Cinnamon
1 cup Flour
1 cup White sugar
1/2 cup Water
Instructions
Peel, core and slice apples. In a bowl, mix together flour, white sugar, and canola oil. Stir until it crumbles.
In a baking dish, place apples evenly. Sprinkle the cinnamon on top of the apples then pour in the water. Take the sugar, flour and oil mixture and pour evenly over the apples.
Bake the apple crisp at 350 degrees for 30 minutes or until apples are tender and the top is brown.

Who doesn't like chocolate cake? There are so many to choose from. And the great thing about this recipe is that you can leave out some of the ingredients, like the espresso powder. Chocolate cake no matter how you make it, still taste great. The fun part about the cake is that you can choose what kind of frosting to use and how you want to decorate it. The other night, my family and I had soup for supper and I was wondering what else to make with it. I was thinking of blueberry muffins but it didn't sound right. It tasted great.
I added flax seed to the instructions, not the ingredients because it is optional. The recipe doesn't call for it but since I love it, I added some to the cornmeal and it was great. You can't even tell that it is in the mixture. So you can add some to anything that you eat.
