Congo Squares

Yummy

Yields: About 12 squares

Ingredients

  • 2 3/4 cups Flour
  • 2 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 2/3 cup Vegetable Oil
  • 2 1/4 cup Brown Sugar
  • 3 Eggs, beaten
  • 1/2 package Chocolate Chips

Instructions

  1. In a bowl, mix the flour, baking powder and salt together, set aside. In another bowl, pour the vegetable oil and add the brown sugar and stir. Add the beaten eggs and stir together. Add the flour, baking powder and salt mixture in with the oil, brown sugar and eggs. Mix all the ingredients together. After you mix it, add chocolate chips to the bowl.
  2. Pour the mixture into a 9 x 12 pan. Bake at 350 degrees for about 30 minutes. When done, take it out of the oven and let cool. Cut into squares when it is almost cool.
I haven't made these Congo Squares for a long time so I thought I would bake them. It is easy and simple to make. I love that when I am done mixing the ingredients, all that needs to be done is to pour the batter into a pan. I wanted something quick and simple and this is the recipe. My mother used to make these squares when I was a child. If you love sweets then you will love these.

Quick Biscuit Recipe


If you are like me, you like recipes that have few ingredients and are easy to make, especially when you are in a hurry or if you decide to make something the last minute. I love this recipe because it is simple.

Ingredients

  • 2 cups flour
  • 1 TBSP Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Shortening
  • 3/4 cup Milk

Instructions

  1. Combine flour, baking powder, and salt in a bowl then join the shortening.
  2. After using a fork to mix everything together like pebbles, pour in the milk. Stir all ingredients into a dough.
  3. Cover the counter with flour, add the dough, and then cover your hands with flour before handling the sticky dough.
  4. When the dough is circular, cut out the biscuits, and then place them on an ungreased cookie sheet before placing the sheet in the 450-degree oven

Sugar Cookies

Have you ever gotten a cookie craving, but you're missing a few ingredients. If so, you are like me. I was craving sugar cookies, so I went to Google and typed in "three-ingredient sugar cookies." But to my dismay, the recipes called for butter, which I didn't have. So I searched for recipes that used vegetable oil, and this one popped up. It wasn't the three-ingredient recipe that I was looking for, but I had all the ingredients. I made this version, and I love it. What's amazing is that my husband loved them too, and he is a picky eater. The cookies are soft in the middle and crispy on the edges. Perfect.

  • 2 eggs
  • 2/3 cup vegetable oil
  • 2 tsp vanilla
  • 3/4 cup sugar

Instructions

  1. Beat eggs with fork and then mix the remaining ingredients.
  2. Drop by spoon on ungreased cookie sheet.
  3. Use a fork to flatten the cookies.
  4. Preheat oven to 400 degrees, and bake for about 8 minutes or slightly brown around the edges.
  5. Place them on a cookie rack to cool

Chocolate Frosting with Vanilla Cake

      I was in a baking mood so I decided to bake a cake.  I found this recipe and decided to try it because it didn't have any milk.  So here is the Vanilla Cake recipe.


Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp white vinegar
  • 5 Tbsp vegetable oil
  • 1 cup water
  • 1 1/2 tsp pure vanilla extract
Instructions
  1. Preheat oven to 350 degrees. Mix the flour, sugar, baking soda, and salt in a greased 8″ square (or round…I prefer the round, but I’ve made this in both) baking pan.
  2. Make 3 depressions in the dry ingredients – two small and one large. Pour the vinegar and vanilla in each of the two smaller depressions, and the vegetable oil in the large one.
  3. Pour water over the entire thing and mix until smooth.
  4. Bake on the middle rack of the oven at 350 degrees for 35 minutes. Let it cool, then top with your favorite frosting and enjoy!

So I made a chocolate frosting. I loved the frosting.  Here is the recipe for the frosting.

  • 3cups powdered sugar
  • 12cup unsweetened cocoa
  • 12cup margarine or 12 cup butter
  • 13cup boiling water
  • 1teaspoon vanilla
  • Combine dry ingredients in a mixing bowl.
  • Add remaining ingredients and beat on low until combined.
  • Beat 1 minute on medium speed.
  • Cool 20-30 minutes.

  I tried it and didn't care for the cake but loved the frosting.

Vanilla Syrup

 



1 cup of water
1 cup of sugar
2 tsp vanilla extract


     Boil water and sugar in a pan until it boils. Reduce heat and simmer for 15 minutes. Stir in the vanilla extract.  Let it cool and put in containers.  It can be use for coffee, pancakes, etc. Keep in room temperature.

Brown Sugar Chicken



                                                         Brown Sugar Chicken


 Preheat oven to 400 degrees F. Season chicken thighs or legs with salt and pepper, 

to taste. Melt 2 tablespoons butter in a large oven-proof skillet over medium high 

heat. Add chicken, skin-side down, and sear both sides until golden brown, about 

2-3 minutes per side; set aside. Melt remaining tablespoon butter in the skillet. Add 

garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes. Remove from 

heat. Stir in brown sugar, garlic and oregano.  Place the chicken back in the pan.  

Then place chicken in a pan and put in the oven for about 25 minutes or until down.


  • Chicken Legs or thighs
  • Salt and pepper
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon dried oregano

Garlic Bread




  • 1 loaf fresh crusty French or Italian bread, split
  • 2 tbsp. unsalted butter 
  • 3 tbsp. extra-virgin olive oil
  • 3 to 6 cloves fresh garlic, to taste
  • 2 tbsp. oregano



     Set your oven to broil and allow it to pre-heat.  Peel the garlic cloves, cut off the ends and mince them finely. Set aside the garlic.  Melt the butter over medium-low heat in a small saucepan. When the butter is melted, add olive oil and minced garlic to the saucepan and warm for five minutes. For a healthier option, omit the butter and heat the olive oil and garlic by themselves over medium-low heat. Stir in the oregano.  Brush the olive oil mixture over each half of the bread. Broil for 30 seconds, or until the bread is golden and toasted on the top.

Pork Chops

     * Pork Chops
     * Oregano
     * Salt
     * Pepper
     * Flour


     In a bowl, combine and stir the flour, oregano, salt and pepper.  Place the pork chops in the flour mixture one at a time.  Make sure the pork chops are coated with the flour mixture on both sides.  In a skillet, pour cooking oil in the pan and place the pork chops in it.  Cook the pork chops until it is tender and done.

     * Rice
     * Garlic
     * Oregano
     * Butter


     Boil water then add the desired amount of rice that you want.  Cut up the garlic and then put in

 the skillet.  Add the oregano, as much as you want and then add the butter.  Stir it all up and

cook until the rice is done.


Cocoa Brownies

                                                         
                                                      COCOA BROWNIES




   * 3/4 CUP FLOUR
   * 1 CUP SUGAR
   * 5 TBSP COCOA
   * 1/2 TSP SALT
   * 1/2 CUP VEGETABLE OIL
   * 2 EGGS
   * 1 TSP VANILLA

      PREHEAT OVEN TO 350 DEGREES.  IN A BOWL, MIX FLOUR, SUGAR, COCOA AND

SALT.  THEN ADD THE VEGETABLE, EGGS AND VANILLA.  MIX THOROUGHLY.

GREASE A 8 X 8 PAN.  POUR BATTER INTO THE PAN.  PUT IN OVEN FOR ABOUT 25

MINUTES OR UNTIL DONE.

Tuna Up A Tuna



     1 can (10 3/4 oz) cream of celery soup
     3 eggs, beaten
     1 1/2 cup of biscuit mix or homemade
     1/3 cup very hot water
     1 cup shredded Monterrey Jack cheese
     1 can (6 1/2 oz) tuna, drained


         In a bowl, stir soup, eggs and tuna, set aside.  Mix well the biscuit mix (or homemade) and hot water.  Knead dough on floured surface until smooth.  Press the dough unto the bottom and up sides of a greased 10 x 6 baking dish.  Sprinkle 1/2 cup of cheese on the dough.  Add the tuna mixture; top with the remaining cheese.  Bake at 350 degrees for 50 minutes.



Chicken with Onions

   Oregano
   Garlic
   Rice

 Sprinkle salt on both sides of the chicken and do the same with whole oregano leaves. Cut up the onions and put some onions on the bottom of the chicken and onions on top of the chicken. Put lid on. Put some water in the skillet and add the rice. Keep stirring until everything is cooked. Then put some in your plate. You should taste the onion on the chicken. Chicken is tender, melts in your mouth. The onion and garlic brings out the juicy and watering taste. Bon Appetite. 

How to cook this is first put oil in the skillet and put your raw chicken meat on it. Have a temperature of 375 and then sprinkle a little salt on both chicken breast. We also sprinkled Oregano on the breast and cooked them not all the way done but for a good 5 minutes or so. Then put some sliced onions down on the skillet and put the breast on top of the sliced unions and then put more sliced unions on top of the breast. Put the lid on the skillet and cook the union flavor into your chicken breast. After about 3 minutes of doing that we put some water in with the chicken breast and rice then stirring while bringing the water to a boil. We added garlic because we like healthy and garlic has many benefits and with the limited spices we had , it seemed as though yes it's the one to add. So we were able to cook and soften up the white rice with the chicken. And while the chicken was in the boiling water it cooked it the rest of the way giving it a nice tender result to the breast making it just melt in your mouth.

Peanut Butter Cookies



     1 cup of Peanut Butter
     1 egg
     1 cup of Sugar

          Combine and mix all three ingredients. Grease cookie sheet. Drop batter by the teaspoon      and take a fork and press the cookie dough.  Preheat oven to 325 degrees. Bake for 12 minutes.  Then place cookies on cookie rack to cool. Eat and enjoy.

                                         My Mother's Homemade Brownies

1 c Sifted Flour
1/3 c Cocoa
1/2 tsp salt
1/2 c. plus 1 tbsp butter
2 c sugar
4 eggs well beaten
1 tsp vanilla

Sift Flour , cocoa , salt together. Cream butter , add sugar gradually cream thoroughly , add eggs and blend. Add sifted dry ingredients , vanilla, spread in a greased 13 x 9 1/2 x 2 inch pan. Bake 325 for 25 to 30 minutes. Cool and cut into squares.
