Cornbread Recipe



The other night, my family and I had soup for supper and I was wondering what else to make with it. I was thinking of blueberry muffins but it didn't sound right. I decided on cornbread and that was the right choice. Cornbread went well with the bean and vegetable soup that my mom and I made. It didn't take long for me to mix up the cornbread and bake it. It tasted great.
I added flax seed to the instructions, not the ingredients because it is optional. The recipe doesn't call for it but since I love it, I added some to the cornmeal and it was great. You can't even tell that it is in the mixture. So you can add some to anything that you eat.

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/4 cup shortening

Instructions

  1. Blend flour, cornmeal, sugar baking powder, salt, milk, eggs, and shortening in a pan. After all of these ingredients are stirred well, add some flax seed to the mix (this is optional). Bake for 20 minutes at 425 degree

Recipe for Tune up a Tuna


If you love tuna, then this is the recipe for you. It is easy to make, and everyone will love it. You can either use a biscuit mix or like my mother, make it from scratch. I think it tastes better when you make the biscuits from scratch.

Ready in: 50 min
Yields: About 6 pieces

Ingredients

  • 1 can (10 3/4 oz) condensed cream of celery soup
  • 3 eggs, beaten
  • 1 1/2 cups biscuit mix or homemade
  • 1/3 cup very hot water
  • 1 cup shredded Monterey Jack cheese
  • 1 can (about 6 1/2 oz) tuna, drain

Instructions

  1. In a bowl, mix together soup, eggs, and tuna. In another bowl, mix biscuit mix and hot water. Knead dough on a floured surface. Press the dough into a greased 10 x 6 baking dish on the bottom and the sides. Put 1/2 cup of cheese on the dough then add the tuna mix. Top it with the rest of the cheese.
  2. Bake at 350 degrees for 50 minutes.

My mother's pumpkin pie



The recipe is for one pumpkin pie but if you want two pies then all you do is double the ingredients. That is what my mother did which is why there are two pies in the picture. I love when my mother makes pumpkin pie. When I make it, it comes out good but never tastes like my mother's. These two pies were gone in two days. My mother made this pie for my nephew's birthday and we ate the other one. It was very yummy. If you make this recipe, I hope you love it as much as I do.

Yields: About 8 slices of pie

Ingredients

  • 1 can pumpkin
  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 3 eggs
  • 1 1/2 cup milk
  • 2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/8 cup molasses

Instructions

  1. In a bowl, mix the can of pumpkin, sugar, salt, and nutmeg. Stir. Add the eggs, milk, cinnamon, ginger, and molasses. Mix together all the ingredients until they are mixed well. In a pie plate, place the crust. Add the pumpkin mixture to the pie crust. Flute the edges of the crust. Place in the oven.
  2. Bake 15 minutes at 475 degrees. Then turn down the heat to 350 degrees and bake for 50 minutes.

Spaghetti Pie


I remember my mother making this recipe once in a while when I was growing up. My mother made this pie the other night because she knew how much I loved it. So I thought that I would share this recipe with everyone so they can have the chance to taste the greatness of this dish. I hope everyone loves it as much as I do!

Ingredients

  • 6 ounces spaghetti
  • 2 tablespoons butter
  • 1/3 cup parmesan cheese, grated
  • 2 eggs, well beaten
  • 1 cup cottage cheese
  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 1 cup tomatoes, cut up
  • 6 ounce can tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried oregano, crushed
  • 1/2 teaspoon garlic salt
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Make the spaghetti-like you normally would. Afterwards, drain the spaghetti. Mix in the butter, stir. Then add the parmesan cheese and the beaten eggs. Stir. In a pie plate, use the spaghetti mixture as the crust, adding the cottage cheese to the spaghetti crust.
  2. In a skillet, cook the beef and onion until they are done then drain the grease. Add the tomatoes, tomato paste, sugar, oregano, and garlic salt and stir and heat.
  3. When the meat mixture is done, pour it into the spaghetti crust. Leave it uncovered for 20 minutes in 350-degree oven. After 20 minutes, take it out of the oven and sprinkle mozzarella cheese on top of the pie. Put back in the oven for 5 minutes or when the cheese melts.

My Mom's Spicy Apple Pie


Every year, my mother makes her famous apple pie for Thanksgiving and Christmas. This is my dad's favorite pie, so she makes sure she makes it. This year, I was home for Christmas so I got to enjoy it, too. My dad and I helped my mother peel, cut, and slice the apples while she made the rest. The pie was great, and there was nothing left by the end of the night.

Cook Time

Cook time: 30 min
Ready in: 30 min
Yields: 8 pieces of pie

Ingredients

  • 8 large apples, sliced thin
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/8 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 425 degrees.
  2. After placing the pie shell in a 9-inch pie plate, fill it with the apple slices.
  3. In a bowl, measure out the sugar, spices, salt, and lemon juice then mix together. Sprinkle this mixture over the apples.
  4. Dot the apples with butter.
  5. Moisten the edge of the pie crust with water then place another pie crust over the apples.
  6. Seal the edges with a fork. Make sure to make 4 slits on the top of the apple pie.
  7. Then place in the oven for 30 to 40 minutes.

Peanut Butter No Bake Bars


For some reason, I have been cooking and baking a lot more than normal. I am going through my mother's recipes and trying them out again. I love going through her recipes because as I do, I can remember my mother baking them when I was little. It brings back good memories. It is a lot more fun when my mother and I do it together.

Ingredients

  • 2 cups sugar
  • 1/2 cup milk
  • 1/2 cup peanut butter
  • 4 cups oatmeal
  • 1/2 cup butter
  • 1 teaspoon vanilla

Instructions

  1. Bring to a boil sugar, butter, and milk. It should take 5 minutes. Take off the stove. Pour in peanut butter, vanilla, and oatmeal. Spread in an 8 x 11 pan. Let it solidify then cut.


One of my favorite foods to eat is my mother's pear salad. What's not to like? Who doesn't like pears, cream cheese, Jello, or Cool Whip? We usually make it for Thanksgiving or Christmas. Everyone loves it. You can make this pear salad anytime.

Ingredients

  • 1 package (3 oz) lime Jello
  • 1 3/4 cup Pear Juice
  • 1 quart Pears, cut in chunks
  • 1 package (8 oz) cream cheese
  • 1/2 pint Cool Whip

Instructions

  1. Add water to pear juice to make 1 3/4 cups then heat in a saucepan on the stove. Pour the juice and water mixture into the lime jello. Cut the cream cheese into small pieces then place into jello. Then use an electric mixer on slow until the cream cheese is all broken up. Cut the pears into small pieces and put it in the mixture and stir. Put the mixture in the refrigerator until it sets a little. Then stir the cool whip into the mixture. Make sure you put it in the refrigerator to chill until it is solid.

My Mother's Homemade Pancake Recipe



 love to cook and bake. I really love doing my mother's recipes and seeing which one I want to try. I have tried this recipe many times but it still hasn't tasted like hers. When I made this the other night, it might not taste the same but it was still good.

Ingredients

  • 2 1/2 cup Flour
  • 1/2 tbsp Salt
  • 1 1/2 tbsp Baking Powder
  • 2 Eggs
  • 1/4 cup Shortening, melted
  • 2 cup Water

Instructions

  1. In a bowl, mix together flour, salt, and baking powder. Add 2 eggs, beat. Stir then add the shortening and stir again. Add water and stir the batter until everything is mixed together. After you are done with the batter, then take a spoon and pour it into a greased frying pan. Flip the pancake over after it bubbles. When it is done, place on a plate and enjoy.

love sugar cookies, so I wanted to find a recipe with just three ingredients. And this recipe is what I found. It is quick to make. Most people have these ingredients in their home so you don't have to go out and buy it. I made these cookies for my niece and nephew, and they loved them.
