Vegetarian Spaghetti



Spaghetti has always been a favorite meal in my family. It is easy to cook, and you can't go wrong with the sauce. I have never had spaghetti without some kind of meat be it, hot dogs, hamburger, or even sausage. So when I made this one night, it was the first time cooking and eating a vegetarian sauce. I was surprised, but it was delicious without the meat and with just zucchini, celery, onions, and corn. This is something that I will make again but maybe with different vegetables. The great thing with spaghetti is that there is no right or wrong way to make the sauce. You can make it just the way you like. I made it because I wanted spaghetti, but we didn't have any hamburger. There were vegetables that I needed to eat up, and so this is what I made instead. This is another one of my experiments that came out great.

Ingredients

  • 1 Zucchini, Cut up
  • 3 stalks Celery, Cut up
  • 1 box Pasta
  • 2 Onions, Peeled and chopped
  • 1 can Corn
  • 1 can Meatless Spaghetti sauce

Instructions

  1. In a saucepan, boil water then add the spaghetti. Cook the spaghetti until it is done. After it is done, take off the stove and drain. Set aside.
  2. While the spaghetti is cooking, cut up the zucchini, celery, and onions. Place in the skillet and sauté until tender. Add the corn and tomato sauce. Stir and simmer until it is hot. Turn off the stove.
  3. Place the spaghetti and sauce on the table. Eat and enjoy.



Cooking Fried Chicken in a Skillet




For supper, I decided that I wanted to cook the chicken that I bought. I decided to pair it with rice since both my husband and I love rice. He likes his with sugar, and I eat mine with soy sauce. Then I had to decide how to cook the chicken. I knew the deep fryer was not a choice since I have no experience using the one we have. So it was either the skillet or toaster oven. This recipe chooses me. I had all the ingredients, and the picture looked amazing. Of course, when I made this recipe, it didn't look like the picture, but it was still delicious and worth the time and effort it took to make. I hope you like this recipe as much as I did.
What I love about chicken is that there are many ways to cook it. For example, this recipe calls for flour, paprika, salt, and pepper. Most people have these in their pantry. You can add ingredients to this recipe. If you don't like paprika, you can take it out and replace it with another spice. There are no bad ways to cook chicken. This recipe is prepped and cooked in an hour, which is great if you're busy.
Since this recipe uses chicken legs, you need to make sure they are cooked at 180 degrees. I had never made this recipe before, but my husband and I loved it. It was mouthwatering and crispy.

Ingredients

  • 7 Chicken Legs
  • 1 TBSP Paprika
  • 1/2 cup Flour
  • 1 1/2 tsp Salt
  • 1/2 tsp Pepper
  • Vegetable oil





Instructions

  1. In a bowl, mix and stir the following ingredients, flour, salt, pepper, and the paprika. Make sure it is mixed well.
  2. In a skillet, pour the vegetable oil and turn on. Pour enough oil so it covers the bottom of the skillet.
  3. Take the chicken legs and place it in the flour mixture. Coat the chicken with the mixture to make sure it is covered. Place the chicken in the skillet on high and let cook for 10 minutes or until brown then flip it over and cook for another 10 minutes. Then for about 20 minutes cook uncovered and turn the temperature down a little. Each skillet is different so make sure the chicken is thoroughly cooked before eating.

Zucchini Bread


I love zucchini so when I had the chance I picked some up for the idea of making zucchini bread. If you are like me, there are times that you have to be in the mood to bake. Yesterday, I was in the baking mood and decided to make the bread before the zucchini went rotten. I don't have a bread or loaf pan so I decided to make it in the cake pan. Then I realized that I didn't have my mother's zucchini bread recipe so had to look online for a simple recipe. I found one and decided to try it. It was while I mixing the ingredients that I realized that I didn't have enough flour but thought oh well, it's too late now. So I proceeded to make the recipe with what I had. So the recipe below is not exactly what the original recipe said to use. I have to admit that it still came out delicious even without the three cups of flour. I used two cups of flour instead. I hope you like this recipe.

Cook time: 30 min
Ready in: 45 min
Yields: Serves about six people

Ingredients

  • 3 cups Zucchini, Shredded
  • 1 1/2 cups Sugar
  • 1 cup Vegetable oil
  • 2 tsp Cinnamon
  • 2 tsp Baking soda
  • 2 Eggs, Beaten
  • 2 tsp Vanilla
  • 3 cups Flour



Instructions

  1. Preheat oven to 350 degrees. Grease a loaf pan.
  2. Shred three cups of zucchini, set aside. In a bowl, mix together sugar, eggs, vanilla, and vegetable oil. Add the zucchini and mix well. Add the flour, cinnamon, and baking soda, stir together.
  3. Place pan in the oven for about 30 minutes. Stick a knife in the bread to see if it is done. Take out of the oven and let cool. Cut, eat and enjoy.
