Zucchini Soup




I made this soup for someone and since it smelled so good, I had to go home and make it for myself. I really love this soup. I don't remember ever having zucchini in a soup but it tastes great. This is a vegetable soup. I topped off this soup with some mozzarella cheese.


Ingredients

  • 2 Zucchini, chopped
  • 1 Onion, chopped
  • 2 TBSP Parsley
  • 2 tsp Basil
  • 1/3 cup Butter
  • 3 cup Water
  • 1/3 cup Flour
  • 1 can Evaporated Milk
  • 3 Bouillon Cubes, chicken
  • 1 tsp Lemon Juice
  • 1 can (14 oz) Diced Tomatoes, undrained
  • 1 10 oz Frozen Corn
  • 1/4 tsp Pepper
  • pinch Salt

Instructions

  1. In a saucepan, saute the zucchini, onion, butter, parsley, and basil until the zucchini and the onion is tender. Slowly add the water, add the pepper, salt, flour. Boil then stir for about two minutes. Add the milk, bouillon cubes, lemon juice, tomatoes, and corn. Cook until it is done
